The Valdres region is rich in food traditions, and the extensive summer farming in the mountains results in a unique food quality.
Valdres is best known for its «rakfisk» (semi fermented trout), but there are many other products that play an important role in our local cuisine. Cured meat, such as our well known local sausage «kurv», reindeer meat and dairy products such as butter, sour cream, cheese and ice cream, are only a few of the many local delicacies. «Rakfisk fra Valdres» and «kurv frå Valdres» are two local products carrying a protected label. Protected labels are used to brand Norwegian food delicacies originating from a defined geographical area and unique tradition.
RAKFISK (Semi fermented fish): «Rakfisk fra Valdres» is trout originating from local lakes and rivers refined through a fermenting process after old traditions. Valdres is the leading region in Norway in the production of rakfisk. You can get rakfisk in three categories: mild, semi-mature and mature. We normally eat «rakfisk» wrapped in a potato tortilla, or with boiled potatoes and butter. It can also be served as sushi.
CURED MEAT: Cured meat is another local specialty, and we are most famous for a type of cured sausage called «spekepølse» or «kurv». This is a cured sausage with local meat from cattle, sheep, goat or game, and it is seasoned with different flavors. These sausages have no added conservatives, and they are dried in the fresh mountain air.
REINDEER MEAT: Valdres has great pastures for reindeer, which results in meat of excellent quality. Reindeer meat is lean, tender and has a balanced game taste.
DAIRY PRODUCTS: Milk from cattle grazing in the mountains of Valdres has more antioxidants and a richer taste than ordinary milk. We also have long traditions in cheese production, especially the caramelized brown cheese. Recently, a local farm started the production of home made ice cream with many different flavors and no artificial additives.
POTATOES: A typical Valdres dinner usually includes potatoes, and potato cultivation has a long history in the Norwegian agriculture. The «Valdres Fjellpotet» is a locally produced organic potato. The potato is also an important ingredient in the making of potato tortillas and the traditional flat bread.
